Getting The Rub

Once you have your meat, you need to give it a good rubdown with your favorite BBQ rub. Again, we're rather partial to 2 Gringos Chupacabra's award-winning special blend of spices. This gives the meat a sweet and spicy kick each and every time.

Of course, it is entirely up to you to decide whether you want a thick rub or a light rub. A thick rub will deliver a powerful punch, but a light rub will let you savor the flavor of the meat and the hints of smoke a little better.

Cooking it Slowly

Finally, don't get in a rush to get everything cooked. Great BBQ is like a Southern drawl: It takes its time. Low and slow is the only way to go. Once you've soaked your wood chips and prepared the meat, plan on smoking the brisket for about 75 minutes per pound. A rack of ribs can be ready in about three hours. Throughout the process, plan on lightly coating your brisket or ribs with a light coat of BBQ sauce or marinadeevery 30-45 minutes.
